I'm so honored and proud to present to you our Red Salsa Belen, it has been a family staple for generations. I remember my mother roasting the chiles, grinding them by hand on the molcajete and we would always have it at home ready to add to eggs, quesadillas, meats and just about every meal. I'm naming this delicious salsa in honor of my beloved mother Belen, we hope you enjoy it as much as we do.

Take your frozen food out of the freezer and put it in the refrigerator to thaw. For a faster alternative, we recommend the Hot Water-Bath (Baño Maria) method: Use boiling tap water and immerse the plastic-wrapped meat in a large pot for about 15 minutes, stirring occasionally. Stirring is important because it prevents a cold zone from developing around the food, insulating it from the remaining warm water.
Serve in a container where you can keep it in your fridge ready to use. The salsa can last 15 days in the fridge.
